So, I'm glad I got the VM moved over beforehand. The first time I used the Apple Boot Camp utility to change the boot drive back to OS X, Converter didn't recognize the drive partitions any longer after being booted back into Win7. On another note, Converter did run on it (I'm not sure why it recognized the GPT disk partition) the first time on the MBP with the fresh Win7 load, and got up to 95%. I'm going to boot the VM up with the Win7 install CD and do a "repair" to see if it fixes the boot issue, shut it down, and then have Converter run against the VM on the ESXi server again afterward to see if the issue is solved. Well, the vmdk is there on the ESXi system - Converter actually got up to 95% before it failed on the last steps (customizing the VM) - it transferred the whole VM over, just didn't get to the final steps of customization.
